That depends on the policy state and glass. Under A.R.S. § 20-264, an Arizona policy has no deductible on covered windshield, door, and window glass only if you elected the full-glass option; otherwise, the comprehensive deductible applies. Under Fla. Stat. § 627.7288, Florida's windshield deductible does not apply with comprehensive or combined additional coverage. Florida's rule is windshield only, so other glass keeps its normal deductible.

In Arizona, A.R.S. § 20-469 lets you choose a glass shop unless your policy contract says otherwise. In Florida, Fla. Stat. § 627.7291 says a claimant may not be required to use a particular company or location for a covered windshield claim.
